Comfort food at its finest: this hearty stew baked in the oven. The beef gets tender and flavorful as it is cooked slowly, and the vegetables soak up all the yummy juices. Wonderful for a cozy night in or to feed a lot of people.
Ingredients:
- 2 lbs stewing beef, cubed
- 4 large potatoes, peeled and cubed
- 4 carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can 14
- 5 oz diced tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
Instructions:
Preheat oven to 325F 165C
In a large oven-safe pot or Dutch oven, combine all ingredients
Cover tightly with a lid or foil
Bake in the preheated oven for 3 to 4 hours, or until beef is tender and vegetables are cooked through
Remove from oven and let cool slightly before serving
Season with additional salt and pepper if needed
