Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cups fresh cherries, pitted and halved
- 1 cup fresh parsley, finely chopped
- cup fresh mint leaves, finely chopped
- cup red onion, finely chopped
- cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Rinse the quinoa thoroughly under cold water
In a medium saucepan, combine the rinsed quinoa and water
Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is tender and the water is absorbed
Remove the cooked quinoa from heat and let it cool to room temperature
In a large bowl, combine the cooled quinoa, fresh cherries, parsley, mint, and red onion
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper
Pour the dressing over the quinoa mixture and toss to combine, ensuring all ingredients are well coated
Refrigerate the salad for at least 30 minutes to allow the flavors to meld
Serve the Cherry Tabbouleh with Quinoa and Basil chilled
