Asian Coleslaw

This coleslaw is a crunchy, refreshing side dish that tastes great and has a lot of different textures and flavors. Peanuts and sesame seeds give it a satisfying crunch, and the mint and cilantro give it a burst of herbal freshness. Its great for barbecues, picnics, or as a side dish with your favorite Asian dishes.

Ingredients:

  • 1/2 small green cabbage, thinly sliced
  • 1/2 small red cabbage, thinly sliced
  • 2 carrots, grated
  • 1 red bell pepper, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped green onions
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup sesame seeds

Instructions:

Put the red cabbage, green cabbage, carrots, and red bell pepper in a large bowl

Add the green onions, cilantro, and mint that have been chopped

Toast the sesame seeds slowly in a small pan until they turn golden brown

Take them off the heat and let them cool down

Toss the roasted peanuts and toasted sesame seeds together with the salad

In a different bowl, mix the dressing ingredients see below with a whisk

Cover the salad with the dressing, then toss it all together until its well sealed

Put the Asian coleslaw in the fridge for at least 30 minutes before you serve it so that the flavors can mix

If you want, you can serve it cold and top it with extra cilantro and mint
