Shrimp & Veggie Stir-Fry

Its easy and quick to make this stir-fry with shrimp and vegetables that is full of flavor and good for you. Its great for a quick dinner during the week or any day of the week.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 cups mixed vegetables such as bell peppers, broccoli, and snap peas
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions:

Warm up the olive oil in a big pan or wok over medium-high heat

Put in the ginger and garlic, and cook for one minute, until the smell is nice

It will take about 34 minutes of cooking after adding the shrimp until they are pink and opaque

Take the shrimp out of the pan and set it aside

Put mixed vegetables in the same pan

For three to four minutes, or until just barely tender

Put the shrimp back in the pan and add the soy sauce and sesame oil

Mix things together well

Add pepper and salt to taste

Add two to three more minutes of cooking

Serve hot on top of rice that has been cooked
