Skinny Quinoa Meatballs are a tasty take on regular meatballs. They use lean ground turkey and the nutty goodness of quinoa. These meatballs are great for a light but filling meal because they are high in protein.
Ingredients:
- 1 cup cooked quinoa
- 1/2 cup lean ground turkey
- 1/4 cup grated Parmesan cheese
- 1/4 cup whole wheat breadcrumbs
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 egg, beaten
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- Cooking spray
Instructions:
Before you start cooking, heat the oven to 375F 190C
Cooked quinoa, ground turkey, breadcrumbs, onion, garlic, beaten egg, oregano, salt, black pepper, and chopped parsley should all be put in a large bowl
Combine well
Make small meatballs out of the mixture and put them on a baking sheet that has been sprayed with cooking spray
Place the meatballs in an oven that has already been heated up
Bake for 20 to 25 minutes, or until they are fully cooked and golden brown
