Ingredients:
- 1 1/2 cups cooked and shredded beets
- 1 cup cooked quinoa
- 1/2 cup rolled oats
- 1/4 cup grated carrots
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped walnuts
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4 whole wheat burger buns
- Lettuce leaves, tomato slices, and onion rings for garnish
Instructions:
Put the cooked and shred beets, cooked quinoa, rolled oats, grated carrots, chopped red onion, minced garlic, fresh parsley, chopped walnuts, ground cumin, smoked paprika, salt, and pepper in a large bowl
Thoroughly mix all the ingredients together until they are well blended
Press the mixture firmly to keep its shape as you shape it into 4 burger patties
Set a grill or skillet over medium-high heat and lightly oil it so that food doesnt stick
After making the patties, cook them for four to five minutes on each side, or until they are hot all the way through and have grill marks
In a food processor, blend together 1 cup of drained and soaked cashews, 2 tablespoons of chipotle peppers in adobo sauce, 2 cloves of garlic, 2 tablespoons of lemon juice, and salt to taste
This will make the Chipotle Cashew Hummus smooth and creamy
Place the whole wheat burger buns on the grill or skillet and toast them for one minute, or until they get a light brown color
Spread a lot of Chipotle Cashew Hummus on the bottom half of each bun before putting the burgers together
After putting the hummus on top of the beet burger, add the lettuce, tomato slices, and onion rings
Put the other half of the bun on top and serve hot
