This Thai Curry Paste Soup is a great mix of flavors that are spicy, creamy, and fragrant. It is a quick and easy way to make a hearty soup with the strong flavor of Thai curry paste.
Ingredients:
- 2 tbsp Thai curry paste
- 4 cups vegetable broth
- 1 can 14 oz coconut milk
- 1 cup sliced mushrooms
- 1 cup diced tofu
- 1 cup chopped bok choy
- 1 red bell pepper, sliced
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp brown sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
In a large pot, heat Thai curry paste over medium heat for 1 minute
Add vegetable broth and coconut milk, bring to a simmer
Add mushrooms, tofu, bok choy, and bell pepper
Simmer for 10 minutes
