Ingredients:
- 2 pounds of pork ribs
- 1 tablespoon of coconut oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 cup of paleo-friendly barbecue sauce
- 1/2 cup of chicken broth
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of ground cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large skillet, heat the coconut oil over medium-high heat
Season the pork ribs with salt, pepper, smoked paprika, and ground cumin
Sear the ribs in the skillet until they are browned on all sides, about 3-4 minutes per side
Transfer the seared ribs to the crock pot
In the same skillet, add the sliced onions and minced garlic
Cook until the onions are translucent and fragrant
Pour in the chicken broth and paleo-friendly barbecue sauce
Stir to combine and bring to a simmer
Pour the sauce mixture over the ribs in the crock pot
Cover the crock pot and cook on low for 6-8 hours, or until the ribs are tender and cooked through
Once cooked, remove the ribs from the crock pot and place them on a serving platter
Skim any excess fat from the sauce in the crock pot and pour it over the ribs
Garnish with fresh parsley and serve hot
