Ingredients:
- 1 medium head of cauliflower, chopped into florets
- 4 cups chicken broth
- 1 cup cheddar cheese, shredded
- 1/2 cup heavy cream
- 8 slices bacon, cooked and crumbled
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
In a large pot, melt the butter over medium heat
Add the diced onion and minced garlic
Saut until the onions are translucent
Add the cauliflower florets and chicken broth to the pot
Bring to a boil
Reduce the heat and simmer for about 15-20 minutes, or until the cauliflower is tender
Using an immersion blender, puree the soup until smooth
Alternatively, you can transfer the soup to a blender in batches and blend until smooth
Return the pureed soup to the pot
Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy
Season with salt and pepper to taste
Serve the soup hot, garnished with crumbled bacon on top
