Ingredients:

  • 6 cups popcorn, popped
  • 1 package 10 ounces marshmallow Peeps
  • 3 tablespoons unsalted butter

Instructions:

Paleo Beef Pot Roast

Ingredients:

  • 5 kg beef chuck roast
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup beef broth
  • 1 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions:

Preheat oven to 160C 325F

Season the beef roast with salt and pepper

In a Dutch oven, heat olive oil over medium-high heat

Brown the beef roast on all sides, then remove from the pot and set aside

In the same pot, add onions, garlic, carrots, and celery

Cook until softened, about 5 minutes

Deglaze the pot with beef broth and balsamic vinegar, scraping up any browned bits from the bottom

Add thyme and rosemary, then return the beef roast to the pot

Cover and transfer to the preheated oven

Roast for 3-4 hours, or until beef is tender and falling apart

Once done, remove the pot from the oven and let it rest for 10 minutes before serving

Slice the beef roast and serve with the vegetables and pan juices

Let the mixture cool all the way down, then put it in the fridge for at least 4 hours, or until its very cold

After the mixture has been chilled, use an ice cream maker according to the directions that came with it

Add the chopped figs and vanilla extract in the last few minutes of churning

Once the ice cream is smooth, put it in a container and freeze it for another two to four hours, until it is firm

Baked Spaghetti Squash Carbonara Paleo - AIP

Ingredients:

  • 1 large spaghetti squash

  • 1/2 onion, finely chopped

Instructions:

While the squash is baking, cook the chopped bacon in a skillet over medium heat until crispy

Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet

In the same skillet with the bacon fat, add the chopped onion and garlic

Cook until softened and fragrant, about 3-4 minutes

Once the spaghetti squash is done baking, use a fork to scrape the flesh into strands

Place the squash strands in a large bowl

Add the cooked bacon, onion, and garlic to the bowl with the spaghetti squash

Pour the coconut cream over the squash mixture and stir until well combined

If using, sprinkle nutritional yeast over the mixture and stir again

Season with salt and pepper to taste

Divide the mixture evenly among the squash shells or transfer to a baking dish

Place the filled squash shells or baking dish back in the oven and bake for an additional 10-15 minutes, or until heated through

Garnish with chopped fresh parsley before serving
