Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup sugar
- 6 egg yolks
- 200g white chocolate, chopped
- 1 cup fresh figs, chopped
- 1 tsp vanilla extract
Instructions:
Set the heavy cream, whole milk, and sugar in a saucepan
Heat them over medium-low heat until they start to simmer
Whisk the egg yolks in a different bowl until they are smooth
Slowly pour the hot cream mixture into the egg yolks while whisking them all the time to keep them from curdling
Put the mixture back in the saucepan
Cook it over low heat while stirring it all the time until it gets thick enough to coat the back of a spoon
Add the chopped white chocolate and stir until it melts and is smooth
Let the mixture cool all the way down, then put it in the fridge for at least 4 hours, or until its very cold
After the mixture has been chilled, use an ice cream maker according to the directions that came with it
Add the chopped figs and vanilla extract in the last few minutes of churning
Once the ice cream is smooth, put it in a container and freeze it for another two to four hours, until it is firm
Enjoy fig and white chocolate ice cream with scoops
